Proviene de la provincia de Aveyron, en la meseta de de Causses, del pueblo de Rochefort-sur- Soulzon. Región llena de cuevas naturales necesarias para la afinación de este queso. Es el queso más antiguo de Francia (antes siglo XIV). Hoy en día se elaboran en la región del Midi francés. Es quizás el queso más conocido y más caro. Tiene su D.O: desde 1925, pero su patente data del siglo XIV.
